Shin-Shin, also known as the Eye of Knuckle, is a tender cut of meat surrounded by Kanenokou and Marukawa muscles. Its texture is unique because you can find two different textures in the same cut: the top part has beautiful marbling, while the bottom is more meaty. This is one of the favorites among Malaysians!
