Karubi holds a reputation as the king of Yakiniku and is mostly cut into yakiniku portions. It is a part of the Chuck Short Rib, which is more expensive due to the limited amount of 4-5kg in a whole Wagyu beef, and only 2kg left after trimming. With high fat content, Karubi has a melt-in-the-mouth texture.
