Kamenokou in Japanese literally means "turtle shell", Japanese people call it Kamenokou because of its shape.
While Knuckle boasts larger cuts such as Tri-tip, Marukawa and Shin-shin, Kamenokou is the smallest part. With a more meaty and slightly chewy texture, it offers a distinct taste and mouthfeel.
